Keto Poha

Keto poha is a low carbohydrate recipe that serves as an alternate to your regular poha and is good for people on Ketogenic diet, or Keto diet for short. So, what is a ketogenic diet? A Keto diet is a low carb, high fat diet. It is meant to drastically reduce the carbohydrate intake and replace it with fat. When you replace carbohydrates and replace it with fats, your body’s metabolism gets into a state called as Ketosis. Your body becomes efficient in burning fat for energy during ketosis.

Keto diet has its own health benefits. This drastically reduces your blood sugar and insulin levels as the diet has very minimal carbohydrates. During ketosis, your body also creates ketones in your lever which gets supplied to your brain for energy.

With all the pros, keto diet also has cons. If not consulted to a doctor / dietician, it may lead to nutrient deficiency, liver or kidney problems, constipation, etc. It is recommended to have such a diet with proper consultation from a certified dietician.

Ingredients:

  1. Cauliflower medium size – 1
  2. Onion medium size – 1
  3. Peanuts – Handful
  4. Green chilli – 1-2
  5. Curry Leaves – 7-8
  6. Mustard Seeds – 1 tsp
  7. Asafoetida (Hing) – Pinch
  8. Turmeric Powder – 1 tsp
  9. Olive Oil – 1 tbsp
  10. Butter – 1 tbsp
  11. Coriander Leaves – for garnish
  12. Salt to taste

Method:

  1. Clean the cauliflower and separate the florets. You can either grind or grate the florets to make rice / poha like texture.
  2. Dry roast the peanuts in a pan till they turn brown and keep aside.
  3. Add olive oil and butter in the pan and add mustard seeds. Once, mustard seeds starts to splutter, add curry leaves, asafoetida (hing), chopped onions and green chilli. Sauté till the onions turn translucent.
  4. Add roasted peanuts, turmeric powder and salt and mix well.
  5. Add grated / ground cauliflower rice / poha and add a splash of water. Mix well and cover and cook on medium flame for 7-8 minutes.
  6. Add chopped coriander leaves on top and squeeze lemon juice on top and serve hot.
