Gajar Halwa

Gajar halwa or carrot pudding came into existence during the Mughal reign. The word ‘halwa’ is derived from Arabic word which means “sweet”. It literally translates to pudding made of carrot. It is believed that halwa was made in Persia using dates and milk. The first known recipe of halwa appeared in an Arabic book called ‘Kitabh al-Tabikh’ which translates to ‘The book of dishes’.

Today there are many variations of Gajar halwa that are served in different parts of India, to name a few – black gajar halwa, red gajar halwa, gajar beetroot halwa, etc. Below is my recipe of Gajar Halwa. Hope you will like it.

Cooking Time:40-45 minutes

Ingredients:

  1. Carrot – 1 Kg
  2. Sugar – 150 g
  3. Full Fat Milk – 200 ml
  4. Mawa – 100 g
  5. Ghee – 3-4 tbsp
  6. Cardamom Crushed – 2-3
  7. Cashew Chopped – 7-8
  8. Almond Chopped – 7-8
  9. Pista Chopped – 7-8

Method:

  1. Peel and grate the carrots.
  2. Heat a pan and add carrots, milk and ghee and cook on low flame till carrots are cooked completely. Keep stirring from time to time. Ensure that milk is completely absorbed by the carrots.
  3. Now add sugar, mawa, cardamom and dry fruits and cook till sugar is completely caramelised and the everything gets mixed well.
  4. Garnish with few chopped dry fruits and serve hot.
